Kelp Cookies

These are a super tasty and a less guilty pleasure biscuit to enjoy with your tea. I prefer to roll these out quite thin rather than the chunky shortbread style, it makes for a lighter bite.

We gather our Kelp fresh from the shore, dry it out and grind it to a fine powder in a Nutri-bullet or coffee grinder. Alternatively you can buy strips of dry kelp in most healthfood shops, you might need to crisp it up more in your oven at a low heat before grinding. 


Ingredients


6 ozs (170g) white flour

4 ozs (110g) butter

2 ozs (55g) castor sugar

1/2oz (14g) of Kelp powder


Preheat the oven to 180c/350f/gas 4.

Put the flour into a bowl, add the Kelp powder and the caster sugar, rub in the butter and bring the whole mixture together to form a dough. 

Roll the dough out and cut into shapes, place carefully on a baking tray lined with parchment and cook in the oven for 6-10mins, or until pale golden.

Take out and cool on a wire rack.


Kombu Kelp or Laminaria digitata is packed with vitamins, minerals and trace elements. It is a rich source of Iodine and in the past was burnt to produce potash which was used in Glassmaking, Ceramics and manufacture of Gunpowder and Explosives.

It is said to be the only plant to contain every mineral and trace element needed for a mammals metabolism.
